Cooking Process: 3-4 days cooked in underground volcanic rock oven; covered in wood from mesquite and oak wood; Once ready it is manually chopped with an axe.
Fermentation: Naturally Fermented with its own plant sugars on wooden stills and natural spring water.
Distillation Process: Double distillations in alembic copper still.
