Production of grapes
Obtained from a careful selection of Aglianico grapes grown in hilly, calcareous-clay soils at an altitude between 200 and 350 m above sea level in the Solopaca sub-area on the slopes of the Taburno-Camposauro Regional Park. The training system is espalier with a yield of 80 q.li / Ha and average age between 10 and 25 years. The harvest takes place from the month of October.
winemaking
The grapes are harvested by hand and conferred on the farm; it follows the de-stemming and the soft pressing of the grains. The vinification in purity is carried out with maceration on the skins with pumpovers; fermentation takes place in stainless steel at a controlled temperature. After a short stay in large Slavonian oak barrels, the wine is aged in barriques for a period ranging from 18 to 24 months; it is then bottled to continue maturation.
Features and combinations
The color is intense ruby red, the nose is complex with pleasant hints of ripe red fruit and jam with hints of spice. The taste is enveloping, complex with a good persistence, pleasantly tannic. Ideal for pairing with red meats and game. Serving temperature 16-18 ° C.
